GAZPACHO OF BARATTIERA AND BASIL
Barrow and gazpacho of basil

Ingredients for 2 people

A barattiera
A handful of basil leaves
100 g of extra virgin olive oil
A slice of broken bread
Three tablespoons of vinegar
salt

Cost
  • Wash and peel the bar
  • Drain its seeds and remove the pulp leaving 1 cm per side as a margin
  • Meanwhile, in a bowl, place the chopped bread and vinegar with a little water
  • As soon as the latter has softened, squeeze it and add it to the pulp, the handful of basil leaves and the oil
  • Put everything in a blender and chop until a soft cream is obtained
  • Taste and adjust salt
  • You just have to fill the bar that you have emptied with the cream and serve cold
  • Garnish with fresh basil leaves.
