POTATO GRATIN WITH CREAM CHEESE AND SAFFRON
Potato gratin with cream cheese and saffron

Ingredients for 4 people

4 potatoes
100 g of Parmigiano Reggiano
200 ml of fresh cream
A bag of saffron
salt
An onion of Tropea

Cost
  • Cut the potatoes into thin slices and cook them in steam
  • Meanwhile, prepare the cream by putting the cream and saffron bag in a small saucepan
  • Cook gently until the cheese is completely melted and the cream is velvety
  • Now in another small saucepan put the sliced onion rings with extra virgin olive oil and a tablespoon of water
  • Cook gently for five minutes and then raise the heat
  • Add the white wine and set aside
  • At this point take two crock cocotte and make a high layer of potatoes
  • Place the onion rings on top of the cream cheese
  • Sprinkle with a tablespoon of grated Parmesan cheese
  • Bake under the grill until it has formed a beautiful golden crust.
