ROUND AUBERGINE PDO
Round aubergine red PDO

Ingredients for 4 people

4 red aubergines
240 g of tuna in oil
A cup of capers
A cup of Taggiasca olives
125 g of mozzarella
1 clove of garlic
Basil
Extra virgin olive oil
salt

Cost
  • Cook the red aubergines in a microwave oven at maximum power for about nine minutes
  • Let it cool
  • Cut the eggplant cap transversely and empty the pulp, being careful not to pierce it
  • In a pan heat a clove of garlic with oil and sauté the aubergine pulp that you have extracted
  • Add the tuna, capers and olives
  • Cook briefly
  • Turn off the salt and add the basil leaves
  • Let cool the filling and add the mozzarella that you have cut into squares
  • At this point, fill the aubergine and place the vegetable lid on the side.
