Ingredients for 4 people

300 gr of carnaroli rice
200 gr of Mantuan sausage
Half onion
Half a glass of white wine
Chicken broth q.b.
200 g of Parmigiano Reggiano
125 g of butter
Salt to taste.
Oil evo q.b.


20 minutes

  • Take the rice and toast it with the extra virgin olive oil
  • Add the chopped onion
  • Mix everything is wet with white wine
  • Continue cooking add the hot stock
  • Separately in another pan take care of the sausage that you have previously peeled and made in small bites
  • Brown the sausage adding the chopped onion and the oil until you see that it takes on a golden color
  • Add the latter with the white wine and let it dry
  • Meanwhile, take care of the risotto by adding the broth slowly
  • As soon as the rice is cooked, turn off the heat and stir in the butter and the cheese
  • Leave to rest for at least 20 minutes, after this serve and garnish with sausage morsels.
