DRAFT BREASTWORK WITH BALSAMIC AND MILLEFIORI HONEY
Roasted duck breast with balsamic and millefiori honey

Ingredients for 4 people

A duck breast
2 tablespoons of Modena balsamic vinegar
2 tablespoons of millefiori honey
1 knob of butter
2 tablespoons of extra virgin olive oil
1 clove of garlic
4 sage leaves
salt
pepper

  • Take the duck breast into the diamond skin
  • Clean and cut the garlic clove into slices
  • Put the meat and the slices in a pan with a little oil and sage
  • Leave to marinate for about two hours in a cool place
  • After this time, take the meat, pat dry well and remove the garlic; let it brown in the pan. Continue cooking for about 20/25 minutes
  • At this point, once the meat is cooked, transfer it to a plate covering it with parchment paper
  • At this point, add the vinegar and honey to the bottom of the pan
  • Cook for about five minutes, mixing all the ingredients well
    Serve the meat cut into slices in a serving dish. Sprinkle with the sweet and sour sauce and garnish with fresh sage leaves.
